Mezze Maniche Pasta with Tuna
If you have a little time on your hands and are ready to make a complete and delicious dish, pasta with tuna is the perfect meal! It is a simple and tasty first course which can be prepared for a quick lunch or dinner.
Ingredients:
- 320g Mezze Maniche Mancini Pasta
- 250g Tuna in oil
- 400g Tomato puree
- 1 Clove garlic
- 1 Sprig parsley
- 1 Fresh chili pepper
- Salt to taste
- 3 tbsp Extra Virgin Olive Oil
- 1 tbsp Anchovies in oil
Method:
- Boil plenty of salted water to cook the pasta. In a pan, let the whole peeled garlic sizzle for a few moments in oil, then remove it.
- Add the drained anchovy fillets in oil and melt them with a little cooking water from the pasta.
- Add the fresh chilli pepper cut into strips, ideally without the seeds, to reduce its spiciness.
- While everything is seasoning, drain the oil from the tuna and place the tuna into the pan.
- Let it season, then wet with a bit of cooking water from the pasta.
- Add the tomato puree and cook for about 10 minutes. Cook the pasta in the boiling water until al dente.
- Drain the pasta and add it to the sauce.
- Add salt, pepper and chopped parsley to taste.
