Among the most authentic and typical flavours of Calabria offered by Delizie di Calabria, the famous Calabrian 'nduja could not miss a very hot spreadable soft salami, whose name comes from the French word "andouille", meaning sausage. The predominant red colour is given by the naturally dried red pepper present in the dough, together with the fat parts of the pig.
'Nduja is typical of Spilinga, but today it is produced everywhere in Calabria.
