Beef Kababs, Better With Segura Viudas Brut Reserva


  • 1 1/2 lbs of lean sirloin, trimmed and cut into 1 inch (2.5 cm) cubes
  • 1 lb (450g) of fresh, whole mushrooms


  • 1/2 cup of balsamic vinegar
  • 1/4 cup of olive oil
  • 3 tbsp of chopped shallots
  • 3 tbsp of fresh rosemary, stems removed, roughly chopped
  • 1/2 tbsp of minced garlic
  • 1/4 tsp of salt
  • 1/4 tsp of fresh ground pepper


Step 1: Combine oil, vinegar, shallots, rosemary, garlic, salt and pepper. Whisk until evenly mixed.

Step 2: Pour the marinade over the meat in a plastic bag and refrigerate for at least 3 hours, or up to 24 hours.

Step 3: Preheat your grill, or braai, to medium heat.

Step 4: Skewer the beef and mushrooms. Depending on how much meat you have, skewer two pieces of beef for every one mushroom.

Step 5: Cook the skewers over medium heat for approximately 5 minutes per side. Adjust the cook time to your taste.

Step 6: Pop open a bottle of Segura Viudas Brut Reserva 2012
